Bongu Chicken, cooked in green bamboo shell is a tribal delicacy. It is popular in Araku Valley of Andhra Pradesh. It is prepared by marinating the chicken in spices, stuffed into bamboo stalk & cooked on firewood. A ready to eat delicacy. Bamboo dishes are an oil free and nutritionally rich dishes.
The bamboo acts as a natural oven, trapping heat and steam inside and cooking the ingredients slowly and evenly. As the bamboo cooks, the juices and flavours of the ingredients and marinade are absorbed into the bamboo, giving the chicken a unique, woody flavour and aroma.
